Ok, onto the recipe !!!! ...
You will need ....
To make 2 creamcheese & fruit sandwishes 4 pieces of bread 2 table spoons cream cheese 2 table spoons fruit preserves (I really like marmelade, but really anything is good, smooshed apple pie filling.. whatever you like)
To make the egg mixture coating 2 eggs 1 teaspoon vannilla extract 1 tablespoon sugar 1 dash nutmeg 1 pinch salt
1 lightly greased frying pan on medium heat, large enough to cook 2 sandiwches at the same time. Preferably have a lid that fits the frying pan
First, set 4 peices of bread and some cream cheese out. Let them sit out for a bit, an hour or longer. I do this first thing, then start my coffee pot and jump in the shower....
The bread should be dried out a bit so it will be more absorbant. The cream cheese is simply easier to spread.
Make the egg coating .. wisk 2 eggs, the vannilla, the nutmeg, the sugar and the salt . After it's completly mixed, pour onto a shallow bowl or plate, so you can easily coat the bread.
Make the cream cheese and fruit sandwiches ... Exactly that. Spread the cream cheese on 2 peieces of bread, and the fruit on the remaining 2. Assemble into sandwiches. Try to avoid getting fruit or cream cheese on the very edge of the bread, leave about 1/4 inch "uncoated" bread around the edges.. This helps the 2 peices seal a bit better.
Dipping and coating ... Ok, you have to kind of work quickly here. First hold a sandwich as if you are going to bite it (please wait though, it'll be worth it trust me) Coat each of the four sides of the sandwich by dipping it and quickly rotating to get all sides evenly, then coat the top and bottom. Again moving quickly, so it doesn't get too saturated
Do the same for the second sandwich. You can drizzle the remaing egg mixture evenly onto the sandwiches so none goes to waste.
Cooking ... After about 3 minutes, the bottom should nice and golden brown. Flip the samdwiches. If you have a lid, add about a teaspon of water directly to the flying pan and cover with a lid. The trappped steam will help to ensure even cooking. After another 3 minutes you should have a nice golden brown piece of stuffed French toast...
Eating ... Wait !!! Ok, you could just eat it as is. I like mine with just a dab of butter on it. My Fiance likes her's with just a bit of maple syrup on it.. and of course there is the classic (although misguided) butter and sprinkled powdered sugar approach... Just try to keep it healthy enough that you can have this for breakfast once a week.
